Home made Brownie Mix

Never buy boxed brownie mix again! Follow the recipe below and make brownies for approximately .30 a mix! Be sure to save this by clicking “SHARE”! You will be able to find it on your own timeline later! So simple, so easy. Not just frugal but cuts out the unknown ingredients.

  • 1 Cup Sugar,
  • 1/2 Cup All-Purpose Flour,
  • 1/3 Cup Cocoa,
  • 1/4 tsp Salt,
  • 1/4 tsp Baking Powder.

At Baking Time Add:

  • 2 Eggs
  • 1/2 Cup Vegetable Oil,
  • 1 teaspoon Vanilla.

Bake @ 350 degrees for 20-25 minutes in an 8×8 or 9×9 pan. OR use the amazing Pampered Chef brownie pan and bake it in much less time – depends on your oven, check after 12-15 minutes of baking and remove when brownies are done!

Put mix in plastic zip-lock bags or mason jars.

Bulk Baking Mixture

This is a standard mixture of flour, baking powder, salt, sugar, and butter that allows you to quickly make biscuits, waffles, cakes, cupcakes, and many other recipes, without the trouble of measuring each ingredient individually. (Note: some of the ingredient measurements are unusual, because I took a larger recipe and cut it down.)

Ingredients:

5 cups all-purpose flour
1/6 cup baking powder
¾ tablespoon salt
1/8 cup sugar
1 cup butter

Combine 5 cups all-purpose flour, 1/6 cup baking powder, ¾ tablespoon salt, and 1/8 cup sugar in a large mixing bowl. Stir until thoroughly mixed. Use a pastry blender to cut in 1 cup of butter, until the consistency of the mixture is like coarse cornmeal. Store in an airtight container at room temperature. This mixture keeps well up to 6 weeks. A simple rule of thumb for using this mixture is to use slightly more of the baking mixture as the amount of flour in your recipe.  I hope you enjoy this time-saver!

Tea Cakes

3 cups self rising flour
3 eggs
2 tblsps vanilla
1/2 Teas. B. Soda
1/4 cup buttermilk or regular
2 cups sugar
Beat all together real good. Spoon enough to drop or add more flour and roll out and cut
Bake at 375 until golden brown 8-12 mins max use your discretion cookie should be crisp.

Cornbread Skillet Dinner

Ingredients:

1 pound lean ground beef
2 eggs, well beaten
1 cup self-rising cornmeal mix
14 ¾-oz. can cream-style corn
1 cup milk
¼ cup vegetable oil
2 cups finely shredded Cheddar cheese
1 large onion, finely chopped
2 to 4 jalapeno peppers, washed, seeded, and finely chopped

½ to 1 tablespoon peanut oil for greasing cast iron skillet
Cilantro, for garnish (optional)

In a large skillet, brown 1 pound lean ground beef over medium heat, stirring constantly. Drain, and set aside. In a large mixing bowl, beat 2 eggs, using an electric mixer. Stir in 1 cup self-rising cornmeal, a 14 ¾-oz. can of cream-style corn, 1 cup milk, and ¼ cup vegetable oil. Place ½ to 1 tablespoon peanut oil in a 10 ½-inch cast iron skillet, and heat

until very hot, but not smoking. (If you do not have a cast iron skillet, you may use a 10-inch deep dish pie plate, greased with peanut oil, but do not heat the oil.) Pour half of the cornbread batter into the hot skillet. Top evenly with the browned ground beef, followed by 2 cups shredded Cheddars cheese, 1 chopped onion, and 2 to 4 chopped jalapeno peppers. Try to get full and even coverage with each layer. Pour as much of the remaining cornbread batter over the top as your skillet will take, leaving at least ½-inch for the cornbread to rise. Bake at 350 degrees for 45 to 55 minutes. Let stand 5 to 10 minutes before cutting into wedges. Serve a wedge on a nice serving plate with some cilantro for garnish, along with a glass of cold milk. This looks great, but tastes even better than it looks!!!
